Honey & Almond Flapjacks

Suggested Honey:CHILEAN FAIRTRADE
- 75g (3oz) Rowse set honey
- 125g (4oz) unsalted butter, cut into pieces
- 50g (2oz) light brown sugar
- 200g (7oz) jumbo rolled oats
- 40g (1½ oz) blanched almonds, cut into slivers
- 30ml (2 tbsp) sesame seeds
- 2.5ml (½ tsp) mixed spice

- Preheat the oven to 180°C/350°F/Gas 4. Grease and line a shallow 18cm (7 inch) square cake tin. Place the hone and butter in a saucepan and heat gently until melted. Stir in the sugar to dissolve. Remove from the heat.

- Add the oats, almonds, half the sesame seeds and mixed spice and stir until evenly coated. Turn into the prepared tin and level the surface. Sprinkle over the remaining sesame seeds.

- Bake for 20-25 minutes or until golden. Leave to cool for 5 minutes, then cut into squares. Leave to firm then transfer to a wire rack to finish cooling. Store in an airtight container.
