Maple Winter Compote
Ingredients serves 6
  • 250g/9oz pitted prunes
  • 250g/9oz dried apricots
  • 100g/4oz raisins
  • 150ml/5floz orange juice
  • 3 bananas, peeled and thickly sliced
  • 4 tbsp Rowse Maple Syrup
  • finely grated rind and juice of 1 lime
  • Greek yoghurt to serve
Method

Place prunes, apricots and raisins in an ovenproof dish. Cover with 300ml/10floz water and orange juice. Leave to soak overnight.

Preheat oven to 180C/350F/gas mark 4. Add banana, Rowse Maple Syrup and lime zest and juice.

Bake in preheated oven for 30 minutes. Serve warm with Greek yoghurt.
