Maple Winter Compote
Ingredients serves 6
- 250g/9oz pitted prunes
- 250g/9oz dried apricots
- 100g/4oz raisins
- 150ml/5floz orange juice
- 3 bananas, peeled and thickly sliced
- 4 tbsp Rowse Maple Syrup
- finely grated rind and juice of 1 lime
- Greek yoghurt to serve

- Place prunes, apricots and raisins in an ovenproof dish. Cover with 300ml/10floz water and orange juice. Leave to soak overnight.

- Preheat oven to 180C/350F/gas mark 4. Add banana, Rowse Maple Syrup and lime zest and juice.

- Bake in preheated oven for 30 minutes. Serve warm with Greek yoghurt.
