Chicken & Grapefruit Salad with Honey Dressing
Ingredients serves 4
Suggested Honey:HUNGARIAN ACACIA
- 30ml (2 tbsp) light soy sauce
- 45ml (3 tbsp) Rowse set honey
- 75ml (5 tbsp) extra virgin olive oil
- 4 skinless chicken breast fillets
- freshly ground black pepper
- 1 pink and 1 red grapefruit
- 1 red chilli, seeded and chopped
- 2.5cm (1 inch) piece fresh
- root ginger, grated
- 1 clove garlic, crushed
- 1 avocado, stoned, peeled and sliced
- 2 little gem lettuces, separated into leaves
- 50g (2oz) walnut halves
- small handful coriander leaves

- Preheat the oven to 200°C/400°F/Gas 6. Mix the soy sauce and 15ml (1 tbsp) each of honey and olive oil together in a small bowl. Place the chicken on a non-stick shallow tray and brush with the soy sauce mix. Season with freshly ground black pepper. Bake for 20 minutes, or until the juices run clear. Brush with marinade after 10 minutes. Leave until warm and then slice.

- Cut the peel and pith from the grapefruits and remove the segments, catching any juice in a bowl. Squeeze the juice from the membrane into the bowl. Add the chilli, ginger, garlic and remaining honey and olive oil; whisk together.

- Arrange the sliced chicken breasts, grapefruit segments, avocado slices, lettuce leaves and walnuts on four serving plates. Drizzle with dressing, sprinkle with coriander leaves and serve.
