Chicken Escalopes with Honey and Mustard Marinade
Ingredients serves 4
Suggested Honey:Rowse Greek Mountain Honey
- 4 chicken breast fillets
- 45ml (3 tbsp) Hot English mustard with seeds
- 30ml (2 tbsp) Rowse Greek mountain or clear honey
- 30ml (2 tbsp) Greek yogurt
- 15ml (1 tbsp) sunflower oil
- salt and freshly ground black pepper
- salad leaves, crusty rolls and mayonnaise to serve, optional

- Place the chicken breast fillets between two pieces of cling film and gently beat with a rolling pin, to slightly flatten.

- In a shallow bowl mix the mustard, honey, yogurt, salt and freshly ground black pepper together. Add the chicken pieces and coat thoroughly in the marinade. Leave to stand, covered for 30 minutes.

- Cook over a gentle heat on the barbecue for 6 minutes, turning frequently and brushing with the marinade 2-3 times, then cook for 3-4 minutes, or until chicken juices run clear and serve. If desired serve with salad leaves and mayonnaise in toasted crusty rolls.
