Minted Honey Lamb Kebabs
Ingredients serves 4
Suggested Honey:GREEK MOUNTAIN
- 450g (1lb) lamb leg steaks, cut into 4cm/ 1½in pieces
- 1 large (or 2 small) red onions
- 1 yellow pepper seeded and cut into chunks
- 8 bay leaves (optional)
- freshly ground black pepper
- 4 flat breads, pitta or tortilla wraps, warmed
- assorted baby salad leaves,
- lemon wedges, to serve
- For the marinade:
- 60ml (4tbsp) Rowse Squeezable Pure Natural Honey
- freshly squeezed juice
- finely pared or grated juice 1 lemon
- 2 cloves garlic, peeled and crushed
- 1 small red chilli, seeded and finely chopped
- 15ml (1tbsp) chopped fresh thyme leaves
- 30ml (2tbsp) chopped fresh mint leaves

- Mix all the marinade ingredients in a large bowl. Stir in the lamb, cover and chill for 1-4 hours.

- Drain lamb and thread onto eight metal skewers with the onion, pepper and bay leaves. Season with black pepper and place on a rack above a grill pan. Grill for 8-10 minutes, turning frequently until cooked to taste.

- Serve the lamb with warmed flat bread, pitta or tortillas, salad leaves and lemon wedges.
