Place onions, olive oil and garlic in a pan over a low heat. Sweat for 25 minutes. Add Rowse Maple Syrup and cook for 15 minutes until golden, stirring occasionally.

Add rosemary, vinegar, season to taste and cook for 5 minutes. Set aside for 20 minutes or until cool.

Preheat oven to 180C/350F/gas mark 4. Slice the bread in half lengthways and then into 5cm/2in lengths. Place on a baking sheet and bake for 10 minutes until crisp.

Spread Blue Brie on bread and top with onion marmalade.
