Mushroom and Goats Cheese with Maple Dressing
Ingredients serves 4
  • 4 tbsp Rowse Maple Syrup
  • 4 tbsp whipping cream
  • 1 tbsp sherry wine vinegar
  • 4 Portabella mushrooms
  • 8 garlic cloves, peeled
  • 2 tbsp fresh thyme
  • 4 slices of olive ciabatta
  • 200g/7oz goat’s cheese, cut into 4 slices
  • 330g/11oz jar artichokes in oil, drained
  • 330g/11oz jar roasted peppers in oil, drained
Method

Reduce Rowse Maple Syrup and cream in a pan until thickened. Stir in vinegar and season to taste.

Place mushrooms on a baking sheet, place two cloves of garlic in each, sprinkle with thyme and season to taste. Grill for 10 minutes or until mushroom is just soft.

Place bread on a separate baking sheet and top with goats cheese. Grill for 5 minutes until golden.

Place bread on a plate, then the mushrooms; top with artichokes and peppers and drizzle with warm dressing.
