Maple Onion Marmalade and Blue Brie on Crispbread
Ingredients serves 4
- 300g/10oz small onions, cut into thin wedges
- 2 tbsp olive oil
- 1 clove garlic, peeled and crushed
- 2 tbsp Rowse Maple Syrup
- 1 tbsp fresh rosemary
- 2 tsp red wine vinegar
- 1 x 30cm/12in baguette
- 150g/5oz Cambazola (Blue Brie cheese)

- Place onions, olive oil and garlic in a pan over a low heat. Sweat for 25 minutes. Add Rowse Maple Syrup and cook for 15 minutes until golden, stirring occasionally.

- Add rosemary, vinegar, season to taste and cook for 5 minutes. Set aside for 20 minutes or until cool.

- Preheat oven to 180C/350F/gas mark 4. Slice the bread in half lengthways and then into 5cm/2in lengths. Place on a baking sheet and bake for 10 minutes until crisp.

- Spread Blue Brie on bread and top with onion marmalade.
