Grilled honey lime salmon

  • 2 tbsp Rowse Orange Blossom honey
  • 1 tbsp Dijon mustard
  • Finely grated zest and juice of 1 lime
  • 2 tbsp dry white wine
  • 2 tsp olive oil
  • 4 x 150g (6oz) skinless salmon fillets
  • Salt and freshly ground black pepper
  • Salad or vegetables, to serve

1. Make the marinade by mixing together the honey, mustard, lime zest, lime juice, wine and olive oil in a shallow dish. Add the salmon fillets and spoon over the marinade. Cover and refrigerate for about 1 hour.

2. Preheat the grill to medium hot. Arrange the salmon fillets under the grill. Cook for 5-6 minutes, basting from time to time with the marinade.

3. Serve with salad or lightly cooked vegetables.

Tips: Instead of the wine, you can use white wine vinegar, plus an extra teaspoon of honey. The marinade is also perfect for fresh tuna steaks or any fresh white fish fillets.
