Honey, oat and seed bircher muesli with red berries and yoghurt

Honey, oat and seed bircher muesli with red berries and yoghurt

Mix this up the night before and you’ll have breakfast ready to go in the morning. It also makes a satisfying snack. The mixture keeps in the fridge for 2-3 days, just give it a stir before serving. For a dairy-free version use coconut yoghurt.

For the bircher base

  • 100g porridge oats
  • 200ml apple juice
  • 2 tbsp mixed seeds (choose from pumpkin, sunflower, linseeds)
  • 1 tbsp Clear Rowse Honey
  • 2 tbsp Plain natural yoghurt or Greek-style yoghurt
  • 1 small apples, coarsely grated (optional)

For the toppings

  • 2 handfuls fresh berries (blueberries, raspberries, strawberries)
  • 1 tbsp goji berries
  • Rowse Clear Honey
  • Plain natural yoghurt or Greek-style yoghurt

1. Mix all the bircher base ingredients apart from the yoghurt and apple together in a bowl or divide between two jam jars, screw the lids on tightly and shake thoroughly to combine. Leave in the fridge overnight.

2. To serve, stir in the 2 tablespoons of yoghurt and the grated apple, if using. Either spoon into bowls, or leave the bircher muesli in the jam jars. Top with fresh berries, a drizzle of honey and a spoonful of extra yoghurt.
