The Manuka honey has a high concentration of the bioactive compound methylglyoxal (MGO). This is reflected in its 100+ MGO rating. MGO is the unique property that is only found in Manuka honey. You may also be familiar with the NPA rating which relates to the amount of Non-Peroxide Activity there is within the honey. NPA is a measurement of MGO, and this honey has an NPA rating of 6+ NPA.

How should I store Manuka honey?

Ensure that you store Manuka honey at room temperature to avoid crystallisation from happening. Around 80% of honey's composition is natural sugars, transformed by the bees from nectar. These natural sugars, which are mainly fructose and glucose, remain liquid at room temperature, but at colder temperatures, the glucose separates from the rest of the sugars and forms small crystals. These are harmless.
