Lemon and honey cupcakes

  • This recipe uses Light & Mild Honey

Ingredients

  1. 150g (6oz) butter, softened
  2. 100g (4oz) caster sugar
  3. 50g (2oz) Rowse Light & Mild honey
  4. Finely grated zest of 1 lemon
  5. 2 medium eggs, beaten
  6. 150g (6oz) self-raising flour
  7. 3 tbsp lemon juice
  8. To decorate:
  9. 100g (4oz) butter, softened
  10. 225g (8oz) icing sugar
  11. 50g (2oz) low fat soft cheese
  12. 1 tbsp Rowse Acacia honey
  13. 1 tsp finely grated lemon zest
  14. Few drops of yellow food colouring
  15. Edible sprinkles, sugar flowers and tiny sweets
